Sweet and Sour Shrimp and Apples

As with most stir-frys, prepping the ingredients (slicing and chopping) for this recipe can be done ahead, leaving just a few minutes of cooking time before serving. |
Ingredients: |
3 tablespoons vegetable oil |
Method: |
1) In large skillet or wok, heat 1 tablespoon oil over high heat; stir fry shrimp until just pink. Transfer shrimp to large bowl and reserve. Add another tablespoon oil to skillet; add apples and stir-fry 1 minute. Transfer to bowl with shrimp. 2) Add remaining tablespoon oil to skillet; add green onion, sweet pepper, and snow peas; stir fry 2 minutes. Transfer vegetables to bowl with shrimp and apples. 3) In small bowl, combine water, brown sugar, vinegar, cornstarch, soy sauce, and ginger; mix until well blended. Pour mixture into skillet and cook, stirring constantly, until boiling and thickened. Reduce heat to low, return all ingredients to skillet and heat through. Serve with rice or noodles, if desired. |
