Granny Smith Confetti Coleslaw

Ingredients:

4 cups chopped Granny Smith apples
2 tablespoons lemon juice
2 cups chopped cabbage
1 red pepper, chopped
2 green onions finely chopped
2 tablespoons chopped sweet pickles (optional)

Combine 1/4 cup yogurt, 2 tablespoons sweet pickle juice, 2 teaspoons Dijon mustard, 1/2 teaspoon honey, 1/4 teaspoon black pepper and 1/8 teaspoon celery seed. Makes about 1/3 cup.

Method:

1) Toss apples with lemon juice. Combine remaining ingredients in large bowl; toss to coat with Confetti Slaw Dressing.
